You’ll Need:

1 pound of ground beef.
3 cups of veggie of your choice.
1 small onion.
Mashed potatoes.
Cheese of your choice.

This dish is also ideal for preparing in advance if you want to host a dinner party later this week.

Just fill the baking dish or gratin dishes with the ribs a day ahead, then top them with freshly made mashed potatoes just before baking. A simple green salad is all you need to serve alongside this flavorful and filling dish.

How to:

In a skillet, brown the ground beef with onions.

In an 8×8 pan, place the uncooked veggies and top with the ground beef then the mashed potatoes.

Sprinkle the cheese over the top and bake in a preheated oven to 350° until the cheese is melted and the veggies are hot throughout!
