Slow Cooker Minestrone Soup (Weight Watchers)

4 cup chicken broth
1 can (14 1/2 oz) italian style diced tomatoes
1 can (19 oz) cannellini beans, drained and rinsed
1 large carrot, diced
1 stalk celery, diced
1 medium leek, light green and white part only, chopped
1 medium zucchini, quartered lengthwise and diced 3/4 inch
1 12 cup green beans, cut into 1 inch pieces
1 lb yukon gold potato, peeled and diced
14 tsp black pepper, freshly ground, or to taste
2 tbsp extra-virgin olive oil
12 tsp salt, or to taste
3 tbsp parmesan cheese, grated


  1. Add chicken broth, tomatoes, cannellini beans, carrot, celery, leek, zucchini, green beans, potato, and black pepper to a slow cooker. Cover and cook on Low for 6 hours or until the vegetables are tender. Stir in olive oil and season with salt. Sprinkle with parmesan cheese just before serving.
